Weekend Vietnamese cooking classes for tourists and locals in a rented Richmond commercial kitchen, A$120 per person.

This idea is probably not worth building as pitched: it enters a market where a 12-year-old Richmond-founded rival and many reviewed classes already sell the same thing. The main reason is no visible wedge and thin margins, since kitchen hire alone is about A$495 per class against about A$960 of revenue at 8 guests. Test first whether council rules allow paid classes in a rented kitchen, then pre-sell 12 seats before spending anything real.
Why the numbers land here. The score is held down by heavy competition from established Vietnamese and Asian classes, a low problem severity, and thin, unverified economics at A$120. Feasibility is fair because kitchen hire is cheap to start, but demand, rules and founder fit are untested.

The eight dimensions
A cooking class is a nice-to-have, not a pain people pay to fix. Customers buy it as a gift, date or tourist activity, and many options already exist.

Tourism spend is at record levels, which helps. I found no Australian cooking-class market size, and no data on the tourist and local split, so the real demand is unverified.

The pitch says nothing about the founder's cooking skill, Vietnamese food credentials, teaching experience or audience. Without that, fit cannot be shown, and rivals lead with chef credentials.

Three things could end this: a council ruling against paid classes in a rented kitchen, kitchen owners refusing guests, and heavy reliance on third-party platforms and reviews to get bookings. Liquor and insurance rules are also unchecked.
